Wellness Recipe: Roasted Chickpea Salad with Kale and Walnuts

This Roasted Chickpea Salad with Kale and Walnuts is more than just a comforting dish—it’s a thoughtful recipe designed to support mental well-being. Packed with fiber, plant-based protein, and

Ingredients: - 1 can (15 oz) chickpeas, rinsed and drained
- 1 bunch of kale, stems removed, chopped
- 1/2 cup walnuts, roughly chopped (excellent source of omega-3s)
- 1/4 cup pepitas (pumpkin seeds, rich in magnesium)
- 1/3 cup dried cranberries (optional, for a touch of sweetness
and
- brightness)
- Pomegranate Arils
- 2 tbsp olive oil (for roasting chickpeas)
- Spices: 1 tsp turmeric, 1/2 tsp smoked paprika, salt, and pepper to
- taste
- Dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions: - Roast the Chickpeas: Preheat oven to 400°F (200°C). Pat the chickpeas dry with a towel. Toss them with 2 tbsp olive oil, turmeric, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until
crispy.
- Prepare the Kale: In a large bowl, add the chopped kale. Drizzle with a little olive oil and a squeeze of lemon juice, and massage with your hands for 2-3 minutes until tender.
- Mix the Salad: Add the roasted chickpeas, walnuts, pepitas, pomegranate arils, and dried cranberries to the massaged kale.
- Make the Dressing: In a small bowl, whisk together the dressing ingredients until well combined.
- Assemble: Pour the dressing over the salad and toss well to coat everything evenly. Serve immediately.
